Smart Snack of the Week: Greek Yogurt Frozen Popsicles

Every where I look, I feel like I’m seeing the words “Back to School”! But I’m still fully in summer mode. Our school doesn’t start for weeks and it is way too hot to even think about returning to the classroom. I’m more focused on staying cool (I even took my kids ice skating today as the temps passed 90!).
Like most of the human race, my three children love icy treats. But your average popsicle is little more than artificially colored sugar water or fruit juice on a stick. Not exactly nutritious! Enter the Frozen Yogurt Ice Pop from the ever-creative Catherine McCord of weelicious. Made with creamy Greek yogurt and packed with protein, this is one popsicle that you can feel good about (and your children will like, too!).
Weelicious has long been one of my favorite cooking-for-kids websites. McCord, a former model, mom of two and trained chef, never seems to run out of fresh, easy and nutritious food ideas. She recently revamped the site, making it easier to find the perfect recipe for a baby, toddler or older kid. She’s gearing up to release her first weelicious cookbook in mid-September. Oh yeah, she also writes regular columns for The Huffington Post, Baby Center, Parents, and People.com. Just thinking about her life makes me really tired (and I pray that she has some really good help!).
While I love the simplicity of Catherine’s popsicle recipe, I’m thinking it would be fun to try adding some pureed fruit such as mangoes or raspberries.
Frozen Yogurt Ice Pops (makes 6 Dixie cups)
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients
- 1 cup plain Greek yogurt ( 0%, 2% or whole milk — Fage, Chobin and Stonyfield are my favorite brands)
- 3 tablespoons honey
Preparation
- In a bowl, mix together the yogurt and honey.
- Pour into Dixie cups*, place wooden popsicle sticks in the center and freeze 4–6 hours or until frozen through.
* these also work great in popsicle molds

What a perfect snack. These are going into the pop molds today…and I agree, Catherine McCord is a wonder woman!
these are great. we use the vanilla flavored yogurt and add in either pureed fruit or chunks of fruit. just made up a batch — cant wait till they are ready!!!
