Friday Links: Ideas and Inspiration for Eating Healthy at Home

I’m ending the week with a round-up of ideas to help your family eat even healthier at home. Because we all can use a little help now and then!
1) Eat beets I’ve literally eaten this Best Ever Beet and Apple Sandwich from One Hungry Mama every day for the past week. She claims that her kids like it; mine ran for the hills when I offered them a bite. But that’s OK, I’m content keeping it all to myself. I have tried swapping the ricotta for feta and skipping the cheese altogether; both were delicious. A generous spread of pesto (preferably spinach-walnut) is mandatory.
2) Have a cooking playdate Just love this idea from my fellow Jamie Oliver Food Ambassador Lindsey Shiffley, who blogs about all things healthy over at The Mullies. If the idea of having kids help prepare the food scares you, try a food tasting playdate instead. It’s a great way to get the wees excited about trying new things!
3) Do a 4-day challenge Either plan and prepare a home-cooked meal as a family or add one extra fruit or veggie to every meal for four days straight (and make it official by signing up for the challenge at LiveWell Colorado).
