| May 16, 2013 | Posted by Stacy under Healthy lunch, Recipes |
As a mother of three, I know all too well the challenges of coming up with healthy school lunches that kids will actually eat—instead of ending up in the trash. So when Jennifer Tyler Lee, the mom behind Crunch a Color: The Healthy Eating Game, asked me to take part in her Healthy Lunch Challenge,… more
Dangerously Good Almond Butter Dark Chocolate Chip Cookie Recipe (Kids Cook Monday)

Since I’ve taken on the issue of junk food in schools, some people assume that I never feed my kids sweets. They couldn’t be more wrong. I actually love making desserts and, at one time, fantasized about owning a bakery. But I do try to incorporate wholesome ingredients into my baked goods and other treats whenever I… more
Quick Dinner Recipe: Whole-Wheat Spinach Crepes (Kids Cook Monday)
| May 7, 2013 | Posted by Stacy under Recipes |
Given all the Goldfish crackers, Teddy Grahams, fruit gummies and other highly processed junk that my kids are constantly handed–at school, church, sports practices, playdates, libraries and everywhere else–I always feel really grateful when someone makes the effort to feed them real food. After all, the last thing that they need is more sugar and refined… more
Happy 1st Birthday to School Bites! Plus, A Recipe for Mini Carrot Cupcakes (Kids Cook Monday)
| April 1, 2013 | Posted by Stacy under Improving school food, Making change, Recipes, Uncategorized |
It was exactly one year ago today that I wrote and published my very first post for School Bites. At the time, I was taking a digital journalism class that required starting a blog. While some of my classmates struggled to come up with a topic, I knew exactly what I wanted to write about:… more
Seriously Yummy Chicken & Veggie Potstickers (Kids Cook Monday)
| February 25, 2013 | Posted by Stacy under Dinner, Recipes |
We don’t eat a lot of Chinese food in my house, mainly because of the lack of good take-out close by. But I love it, and I want my kids to love it, too. So I decided to try making a chicken and veggie potsticker recipe that I found on weelicious (one of my favorite sources… more
Holiday Recipe: Whole-Wheat Gingerbread Cookies With No Artificial Colors (Kids Cook Monday)

Calling these gingerbread cookies “healthy” might be a stretch since they contain a fair amount of butter and sugar. But they are made with 100% whole-wheat flour and contain no food dyes whatsoever. In my book, it makes them a perfect holiday treat for my family. I baked them on Friday for the annual cookie… more
Healthy Treats for Kids: Fudgy No-Bake Brownie Bites (Kids Cook Monday)

At this time of year, I find it helps to keep some healthy treats around to satisfy those sweet cravings. Even though they’re technically more like Larabars, these fudgy no-bake brownie bites–made with raw almonds, dates, cacao powder and just one tablespoon of honey, then dusted with confectioner’s sugar–taste surprisingly like real brownies. My 4-year-old… more
Healthy After-School Snack: Raspberry Whole Wheat Mini Muffins
| November 17, 2012 | Posted by Stacy under Healthy snacks, Recipes |
My kids are always hungry when they get home from school. And when time allows–and even when it doesn’t, which explains why I’m always running late–I love surprising them with healthy fresh-baked muffins. Despite the countless batches I’ve made since becoming a mom, I had never once made raspberry. But they sounded good so I… more
Unbelievably Easy Weeknight Dinner for Kids: The Personal Frittata (Kids Cook Monday)

Meet my new favorite dish for busy school nights: the personal frittata. On days when I pull in late with hungry kids and no dinner prepared, it’s easy to whip up a batch in minutes. The recipe, culled from Giada De Laurentiis, calls for just a handful of ingredients: eggs, whole milk, cheese, green onions, salt… more
3-Minute Breakfast for Kids: Do-It-Yourself Microwave Oatmeal (Kids Cook Monday)
| November 5, 2012 | Posted by Stacy under Breakfast, Recipes |
For whatever weird reason, my kids go wild over packets of instant oatmeal (which they refer to as “Daddy oatmeal” as he is the one who buys it!). But I’m not too wild about the artificial colors and flavors and corn syrup sweeteners that go into most brands. So I was really excited when… more
I created this blog to raise awareness and start a dialogue about the various issues involved in school food. By writing about it, I hope to provide parents and educators with ideas and inspiration for making healthy changes in their own schools. Since healthy eating habits start at home, I also address common feeding challenges faced by parents.
