Smart Snack of the Week: Apple Boat with Fruit Salad

I just love this super-creative (and yes, healthy!) snack idea from the mom of one of my son’s classmates, which she dreamed up (literally–it came to her in a dream!) for their kindergarten class.
To make it: Scrub a medium-to-large apple, then cut it in half. Use a spoon to scoop out the core and flesh, being careful not to pierce the skin. Fill the apple with chopped fruit (like melon and berries) and add a cupcake topper or other fun decoration (if desired). Delish!
